- 1/2 cup cottage cheese
- 2 large eggs
- 2 tablespoons almond flour
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Combine cottage cheese, eggs, almond flour, baking powder, and salt in a food processor or blender. Blend until completely smooth.
- Pour the batter onto the prepared baking sheet. Spread it into a rough circle or rectangle, about 1/4 inch thick.
- Bake for 20 to 25 minutes, or until the edges are golden brown and the center is set.
- Remove from the oven and let it cool slightly before slicing or using as a wrap.
Notes
- For a crispier texture, you can briefly broil the flatbread for the last minute of cooking.
- You can add dried herbs like oregano or garlic powder to the batter for flavor.
- This flatbread works well as a base for pizza toppings or as a wrap for sandwich fillings.
