Description

A recipe for making rich, homemade chicken ramen broth and assembling a satisfying bowl.

Ingredients

Scale
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 large onion, quartered
  • 4 cloves garlic, smashed
  • 1 inch ginger, sliced
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 1 teaspoon sesame oil
  • 12 ounces ramen noodles
  • 2 large eggs
  • 4 sheets nori (seaweed), cut into strips
  • 2 scallions, thinly sliced
  • 1 cup shiitake mushrooms, sliced

Instructions

  1. Combine chicken broth, chicken, onion, garlic, and ginger in a large pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until chicken is cooked through.
  2. Remove chicken from the pot and shred it using two forks. Set aside.
  3. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids. You should have about 5 cups of clear broth.
  4. Return the strained broth to a simmer. Stir in soy sauce, mirin, and sesame oil. Keep warm.
  5. Cook the ramen noodles according to package directions. Drain well.
  6. While the noodles cook, prepare the eggs: Bring a small pot of water to a boil. Gently lower the eggs into the water and cook for 6 to 7 minutes for a soft-boiled center. Immediately transfer eggs to an ice bath to stop cooking. Peel and slice in half.
  7. Divide the cooked noodles among four serving bowls.
  8. Ladle the hot broth over the noodles.
  9. Arrange shredded chicken, sliced mushrooms, nori strips, and sliced scallions over the noodles in each bowl.
  10. Place one halved soft-boiled egg on top of each serving.

Notes

  • For richer flavor, roast the chicken pieces before simmering them in the broth.
  • You can substitute dried shiitake mushrooms by soaking them in hot water for 20 minutes before slicing. Use the soaking liquid in the broth for extra depth.
