Description
A quick and simple stir fry using chicken and zucchini noodles flavored with garlic.
Ingredients

- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 3 medium zucchini, spiralized into noodles
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1/4 teaspoon black pepper
- 1 green onion, sliced, for garnish
Instructions
- Heat the olive oil in a large skillet or wok over medium-high heat.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the minced garlic to the same skillet and cook for 30 seconds until fragrant. Do not let it burn.
- In a small bowl, whisk together the soy sauce, honey, ginger, and black pepper.
- Add the zucchini noodles to the skillet. Stir fry for 2-3 minutes until slightly tender-crisp. Do not overcook.
- Return the cooked chicken to the skillet. Pour the sauce mixture over the chicken and noodles. Toss everything together until well coated and heated through, about 1 minute.
- Serve immediately, garnished with sliced green onion.
Notes
- If you prefer softer zucchini noodles, cook them for an extra minute.
- You can substitute chicken thighs for breasts if desired.
