Spicy Calabrian Chili Pasta

Description

A quick pasta dish featuring the heat and flavor of Calabrian chili peppers.


Ingredients

  • 1 pound pasta (spaghetti or linguine)
  • 1/4 cup olive oil
  • 4 cloves garlic, thinly sliced
  • 1/4 cup Calabrian chili paste or chopped chilies
  • 1/2 cup pasta water
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the sliced garlic and cook until fragrant, about 1 minute. Do not let the garlic brown.
  4. Stir in the Calabrian chili paste. Cook for 1 minute, stirring constantly.
  5. Add about 1/2 cup of the reserved pasta water to the skillet and bring to a simmer. The sauce will emulsify slightly.
  6. Add the drained pasta to the skillet. Toss well to coat the pasta with the sauce.
  7. Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce thickens slightly and coats the pasta. Add more pasta water, one tablespoon at a time, if the sauce seems too dry.
  8. Season with salt and black pepper to your taste.
  9. Serve immediately, garnished with extra Parmesan cheese and fresh parsley.

  • Use the pasta cooking water to control the final consistency of the sauce.
