Description

A simple, fresh Italian salad with crisp vegetables and a light vinaigrette.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup black olives, pitted
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and chop the romaine lettuce. Place it in a large bowl.
  2. Add the cherry tomatoes, cucumber, red onion, and black olives to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad ingredients.
  5. Toss gently to coat everything evenly.
  6. Sprinkle the Parmesan cheese over the top before serving.

Notes

  • For extra flavor, add 1/2 cup of cubed provolone cheese.
  • You can prepare the dressing up to one day ahead and store it in the refrigerator.
