Description

A quick and simple pasta dish featuring garlic and Parmesan cheese.


Ingredients

  • 1 pound spaghetti or linguine
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Cook pasta according to package directions. Before draining, reserve about 1 cup of the starchy cooking water. Drain the pasta.
  2. While the pasta cooks, melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the melted butter and cook for about 1 minute until fragrant. Do not let the garlic brown.
  4. Add the drained pasta to the skillet with the butter and garlic.
  5. Pour in about 1/2 cup of the reserved pasta water and toss well to coat the pasta.
  6. Remove the skillet from the heat. Gradually add the grated Parmesan cheese, tossing constantly until a creamy sauce forms. Add more pasta water, a tablespoon at a time, if the sauce seems too dry.
  7. Serve immediately.

  • For a thinner sauce, add a little more pasta water.
