Description

A quick recipe for a vegetable stir fry served with a simple peanut sauce.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 head broccoli, cut into florets
  • 2 carrots, sliced thinly
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 1/2 cup water or vegetable broth
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup water (for thinning sauce)
  • Cooked rice, for serving

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add broccoli and carrots. Stir fry for 3 minutes.
  3. Add red bell pepper and snow peas. Stir fry for another 3 minutes until vegetables are tender-crisp.
  4. Remove vegetables from the skillet and set aside.
  5. In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, ginger, and minced garlic.
  6. Add 1/4 cup of water to the sauce mixture and whisk until smooth. Add more water if you prefer a thinner sauce.
  7. Return the vegetables to the skillet. Pour the peanut sauce over the vegetables.
  8. Stir gently to coat all vegetables evenly. Cook for 1 minute until the sauce is heated through.
  9. Serve immediately over cooked rice.

Notes

  • You can substitute vegetables based on what you have available. Cauliflower or mushrooms work well.
  • For extra flavor, add a dash of sriracha to the peanut sauce.
