Description
A simple recipe for sweet potatoes filled with seasoned ground turkey taco meat.

- 2 large sweet potatoes
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 packet taco seasoning mix
- 1/2 cup water
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Optional toppings: salsa, sour cream, avocado slices
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Prick the sweet potatoes several times with a fork. Bake for 45 to 60 minutes, or until tender.
- While potatoes bake, heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add ground turkey to the skillet. Cook, breaking it up, until browned. Drain any excess fat.
- Stir in taco seasoning and water. Bring to a simmer and cook until the liquid reduces, about 5 minutes.
- Once potatoes are cooked, slice them open lengthwise. Fluff the inside flesh with a fork.
- Spoon the turkey taco mixture into the center of each sweet potato.
- Top with shredded cheddar cheese, cilantro, and your preferred toppings.
Notes
- You can substitute ground chicken or lean ground beef for the turkey.
- Prepare the taco filling ahead of time and reheat when ready to serve.
