Turkey Taco Stuffed Sweet Potatoes

Description

A simple recipe for sweet potatoes filled with seasoned ground turkey taco meat.


Ingredients

  • 2 large sweet potatoes
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: salsa, sour cream, avocado slices

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Prick the sweet potatoes several times with a fork. Bake for 45 to 60 minutes, or until tender.
  3. While potatoes bake, heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  4. Add ground turkey to the skillet. Cook, breaking it up, until browned. Drain any excess fat.
  5. Stir in taco seasoning and water. Bring to a simmer and cook until the liquid reduces, about 5 minutes.
  6. Once potatoes are cooked, slice them open lengthwise. Fluff the inside flesh with a fork.
  7. Spoon the turkey taco mixture into the center of each sweet potato.
  8. Top with shredded cheddar cheese, cilantro, and your preferred toppings.

Notes

  • You can substitute ground chicken or lean ground beef for the turkey.
