  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup sliced black olives
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons salsa (for dressing)
  • 1 tablespoon lime juice

Instructions

  1. Toss the sliced chicken with olive oil and fajita seasoning in a bowl.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add the sliced bell peppers and onion to the same skillet. Cook until tender-crisp, about 5 minutes.
  4. In a large bowl, combine the mixed greens, cherry tomatoes, and black olives.
  5. Top the greens mixture with the cooked chicken and sautéed vegetables.
  6. In a small bowl, whisk together the salsa and lime juice to create a dressing.
