A simple recipe for a flavorful chicken fajita salad.

- 1 pound boneless, skinless chicken breasts, sliced
- 1 tablespoon olive oil
- 1 packet fajita seasoning mix
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 4 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sliced black olives
- 1/4 cup shredded cheddar cheese
- 2 tablespoons salsa (for dressing)
- 1 tablespoon lime juice
Instructions
- Toss the sliced chicken with olive oil and fajita seasoning in a bowl.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add the sliced bell peppers and onion to the same skillet. Cook until tender-crisp, about 5 minutes.
- In a large bowl, combine the mixed greens, cherry tomatoes, and black olives.
- Top the greens mixture with the cooked chicken and sautéed vegetables.
- In a small bowl, whisk together the salsa and lime juice to create a dressing.
- Drizzle the dressing over the salad. Sprinkle with shredded cheddar cheese before serving.
Notes
- You can substitute turkey or shrimp for the chicken.
- Use your favorite store-bought vinaigrette if you prefer a different dressing.
