- 2 blocks instant ramen noodles
- 1 cup cooked chicken breast, shredded or diced
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 tablespoons chili garlic sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 cup mixed vegetables (e.g., sliced carrots, snow peas, mushrooms)
- 2 cups chicken broth
- 1 green onion, sliced, for garnish
Instructions
- Cook the ramen noodles according to package directions until tender. Drain and set aside.
- Heat the vegetable oil in a large skillet or pot over medium heat.
- Add the minced garlic and grated ginger. Cook for about 30 seconds until fragrant.
- Stir in the chili garlic sauce and cook for 1 minute.
- Add the mixed vegetables and cook until they are slightly tender-crisp, about 3 to 4 minutes.
- Pour in the chicken broth and soy sauce. Bring the mixture to a simmer.
- Add the cooked chicken and sesame oil to the broth mixture. Heat through for 1 minute.
- Add the cooked ramen noodles to the skillet. Toss everything together until the noodles are coated with the sauce and heated through.
- Serve immediately, garnished with sliced green onion.
Notes
- Adjust the amount of chili garlic sauce to control the spice level.
- You can substitute the chicken with tofu or shrimp.
