  • 1 cup corn kernels (canned or frozen, thawed)
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/2 cup chopped cilantro
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the shredded chicken, corn, black beans, red onion, and cilantro in a large bowl.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, cumin, salt, and pepper.
