Description
A quick and refreshing cold noodle salad featuring soba noodles and a light sesame dressing.
Ingredients

- 8 ounces dried soba noodles
- 1 cup shredded carrot
- 1 cup thinly sliced cucumber
- 1/2 cup chopped scallions
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
Instructions
- Cook soba noodles according to package directions. Drain and rinse immediately with cold water to stop cooking. Set aside.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, and garlic to make the dressing.
- In a large bowl, combine the cooled soba noodles, shredded carrot, sliced cucumber, and scallions.
- Pour the dressing over the noodle and vegetable mixture.
- Toss gently until all ingredients are evenly coated.
- Chill for at least 15 minutes before serving.
Notes
- You can add toasted sesame seeds for garnish.
- For added protein, include shredded chicken or edamame.
