Description

A warm, soft cobbler with a cinnamon-sugar topping reminiscent of a snickerdoodle cookie.


Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Grease an 8×8 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, mix the melted butter, 1/2 cup of the granulated sugar, egg, and vanilla extract until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. Stir in the milk until the batter is smooth.
  6. Pour the batter into the prepared baking dish.
  7. In a small bowl, mix the remaining 1/2 cup of granulated sugar and the cinnamon. Sprinkle this mixture evenly over the batter.
  8. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  9. Let cool slightly before serving.
