Description
A simple, hearty casserole made in the slow cooker with ground beef, beans, corn, and cheese.
Ingredients

- 1 pound ground beef
- 1 medium onion, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can mild enchilada sauce
- 1 cup frozen corn
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Brown the ground beef and drain any excess fat.
- Place the browned beef and chopped onion into the slow cooker.
- Add the black beans, kidney beans, diced tomatoes (with liquid), enchilada sauce, corn, chili powder, cumin, salt, and pepper to the slow cooker.
- Stir all ingredients together until well combined.
- Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
- About 15 minutes before serving, stir in the shredded cheddar cheese until melted.
- Serve hot.
Notes
- You can substitute ground turkey for ground beef.
- Add a dash of hot sauce for extra heat.
