Ingredients

  • 1 lb large shrimp, cooked and peeled
  • 2 ripe avocados, diced
  • 1 large ripe mango, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 4 cups mixed greens

Instructions

  1. In a medium bowl, gently combine the cooked shrimp, diced avocado, diced mango, sliced red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice and olive oil.
  3. Pour the dressing over the shrimp and fruit mixture. Toss lightly to coat. Season with salt and pepper.
  4. Divide the mixed greens among four serving bowls.
  5. Spoon the shrimp and fruit mixture evenly over the greens in each bowl. Serve immediately.

Notes

  • You can grill or sauté the shrimp instead of using pre-cooked shrimp.
