Description

Ingredients

  • 1 1/4 cups buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted, plus more for the griddle
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 1/4 cup cocoa powder

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  2. In a separate medium bowl, whisk together the buttermilk, egg, melted butter, vanilla extract, and vinegar.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  4. Stir in the red food coloring and cocoa powder until the batter is uniformly red. A few small lumps are acceptable.
  5. Heat a lightly oiled griddle or large non-stick skillet over medium heat.
  6. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the edges look set. Flip and cook the other side until golden brown.
  8. Repeat with the remaining batter.

Notes

  • Serve with cream cheese glaze or whipped cream for a true red velvet experience.
  • For a richer color, use gel food coloring instead of liquid.
