One Pot Salmon and Rice

Description

A simple recipe for cooking salmon and rice together in a single pot.


Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen peas

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until soft, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add rice, chicken broth, dill, salt, and pepper to the pot. Bring the mixture to a boil.
  5. Once boiling, reduce heat to low, cover the pot, and simmer for 15 minutes. Do not lift the lid.
  6. After 15 minutes, gently place the salmon fillets on top of the rice mixture.
  7. Cover the pot again and continue to cook for another 10 to 12 minutes, or until the salmon is cooked through and flakes easily.
  8. Stir in the frozen peas during the last 2 minutes of cooking.
  9. Remove from heat and let stand, covered, for 5 minutes before serving.

Notes

  • You can substitute vegetable broth for chicken broth if preferred.
  • Use fresh herbs like parsley for garnish if you like.
