Make refreshing lemon ginger ale at home using natural ingredients.
Ingredients

- 1 cup fresh lemon juice
- 1 cup fresh ginger, peeled and sliced
- 1 cup sugar
- 6 cups water
- 1/2 teaspoon cream of tartar
- Club soda or sparkling water, for topping
Instructions
- Combine the sliced ginger, sugar, and 4 cups of water in a saucepan.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes. This creates the ginger syrup.
- Remove the syrup from the heat and let it steep for 30 minutes.
- Strain the syrup through a fine-mesh sieve into a clean bowl, pressing on the ginger solids to extract all liquid. Discard the solids.
- Stir the fresh lemon juice and cream of tartar into the ginger syrup. Add the remaining 2 cups of water.
- Chill the concentrate thoroughly in the refrigerator.
- To serve, pour about 1/4 cup of the concentrate into a glass filled with ice. Top with club soda or sparkling water. Adjust concentrate amount to your taste.
Notes
- For a less sweet drink, reduce the sugar amount in the syrup base.
- You can store the concentrate in an airtight container in the refrigerator for up to one week.
- If you prefer a spicier flavor, simmer the ginger for a longer time.
