Moroccan Fish Tagine

Description

A flavorful stew featuring white fish cooked with preserved lemons, olives, and spices.


Ingredients

  • 2 lbs white fish fillets (such as cod or snapper)
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup fish broth
  • 1/2 cup pitted green olives
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 preserved lemon, quartered

Instructions

  1. Season the fish fillets lightly with salt and pepper. Set aside.
  2. Heat the olive oil in a large tagine or heavy-bottomed pot over medium heat.
  3. Add the sliced onion and cook until softened, about 5 minutes.
  4. Add the minced garlic, cumin, coriander, turmeric, paprika, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  5. Stir in the diced tomatoes (with juice), fish broth, olives, cilantro, and parsley. Bring the mixture to a simmer.
  6. Gently place the seasoned fish fillets into the simmering sauce. Arrange the preserved lemon quarters around the fish.
  7. Cover the tagine or pot and cook on low heat for 15 to 20 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Taste the sauce and adjust salt and pepper if needed.
  9. Serve hot, directly from the tagine if possible.

Notes

  • Serve this tagine with couscous or crusty bread to soak up the sauce.
  • If you do not have preserved lemons, use the zest and juice of one fresh lemon, added during the last 5 minutes of cooking.
