Description

Ingredients

  • 4 (6 ounce) cod fillets
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. Place the cod fillets in the prepared baking dish.
  3. Drizzle the olive oil evenly over the fish.
  4. Scatter the lemon slices, cherry tomatoes, and olives around and over the cod.
  5. Sprinkle the minced garlic, oregano, salt, and pepper over the fillets.
  6. Bake for 12 to 15 minutes, or until the fish flakes easily with a fork.
