Ingredients

  • 4 medium baking potatoes
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup vegetable broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Rub the potatoes with olive oil and prick them several times with a fork. Bake for 45 to 60 minutes, or until tender.
  2. While potatoes bake, heat a small amount of oil in a skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
  3. Add the garlic and cook for 1 minute more until fragrant.
  4. Stir in the black beans, kidney beans, vegetable broth, chili powder, cumin, and cayenne pepper. Bring the mixture to a simmer.
  5. Reduce heat to low and cook for 10 minutes, stirring occasionally, until the liquid has slightly reduced.
  6. Slice the baked potatoes open lengthwise. Fluff the inside with a fork.
  7. Spoon the spicy bean mixture over the potatoes.
  8. Top each potato with shredded cheddar cheese and fresh cilantro. Serve immediately.

Notes

  • For extra flavor, you can add 1/4 cup of diced green bell pepper with the onion.
  • If you prefer a thicker bean mixture, cook it down for a few extra minutes.
