Description

A hearty meatloaf baked as a casserole and topped with cheese and bacon.


Ingredients

  • 2 lbs ground beef
  • 1 cup bread crumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 small onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, and garlic powder. Mix gently until just combined; do not overmix.
  3. Press the meat mixture evenly into the prepared baking dish.
  4. Bake for 30 minutes.
  5. Remove the dish from the oven. Spread the ketchup evenly over the top of the meatloaf.
  6. Sprinkle the shredded cheddar cheese and crumbled bacon over the ketchup layer.
  7. Return the casserole to the oven and bake for another 15 to 20 minutes, or until the cheese is melted and bubbly and the internal temperature reaches 160 degrees Fahrenheit.
  8. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • You can substitute ground turkey or a mix of ground beef and pork for the ground beef.
  • For a smoother topping, mix the ketchup with 1 tablespoon of brown sugar before spreading.
