Ingredients

  • 1.5 lbs red potatoes, quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, combine the quartered red potatoes, olive oil, minced garlic, rosemary, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
  4. Roast for 30 to 35 minutes, flipping the potatoes halfway through, until they are golden brown and tender inside.
  5. Remove the potatoes from the oven. Immediately toss them with the lemon zest and fresh lemon juice.
  6. Serve hot.
