Description

A simple, flavorful chopped salad featuring romaine lettuce, radicchio, chicken, and a sharp vinaigrette.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1/2 head radicchio, chopped
  • 1 cup cooked chicken breast, chopped
  • 1/2 cup mozzarella cheese, cut into small cubes
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together the red wine vinegar, olive oil, Dijon mustard, and minced garlic. Season with salt and pepper. This is your dressing.
  2. In a large bowl, combine the chopped romaine lettuce, chopped radicchio, chopped chicken, and mozzarella cubes.
  3. Pour the dressing over the salad ingredients.
  4. Toss the salad gently until all ingredients are lightly coated with the dressing.
  5. Sprinkle the grated Parmesan cheese over the top before serving.
