Ingredients
Scale
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup white rice
- 2 cups water
- 2 tablespoons soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon cornstarch
- 1/4 cup water (for slurry)
- Optional: Green onions, sliced, for garnish
Instructions
- Cook the rice according to package directions using 2 cups of water.
- In a small bowl, whisk together soy sauce, honey, minced garlic, and ginger. Set aside.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Pour the reserved sauce mixture over the cooked chicken. Bring to a simmer.
- In a separate small bowl, mix cornstarch and 1/4 cup water to create a slurry.
- Stir the slurry into the simmering sauce. Cook until the sauce thickens, about 1 minute.
- Serve the honey garlic chicken over the cooked rice. Garnish with sliced green onions if desired.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- For a thicker sauce, increase the cornstarch slightly.
