Instructions
- Place the peeled and cored apples in a food processor and pulse until they form a coarse puree.
- Add the rolled oats, plant milk, maple syrup, baking powder, cinnamon, and salt to the food processor.
- Process until the mixture is just combined and slightly chunky; do not overmix.
- Heat a lightly oiled non-stick skillet over medium heat.
- Pour batter onto the skillet to form small pancakes.
- Cook for 3 to 4 minutes per side, until golden brown and cooked through.
- Serve immediately.

- You can substitute the rolled oats with oat flour for a smoother batter.
