A quick and simple one-pan meal featuring seasoned ground turkey and vegetables.
Ingredients

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 packet (1 ounce) taco seasoning mix
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 cup water
- 1 cup shredded cheddar cheese
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in the taco seasoning mix, black beans, diced tomatoes with green chilies, and water.
- Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally, allowing the liquid to reduce slightly.
- Sprinkle the shredded cheese over the top. Cover the skillet and cook until the cheese is melted, about 2 minutes.
- Serve hot.
Notes
- Serve this skillet mixture over rice or with tortilla chips.
- You can substitute ground chicken or lean ground beef for the turkey.
