Description

A quick and simple one-pan meal featuring seasoned ground turkey and vegetables.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1 cup water
  • 1 cup shredded cheddar cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  4. Stir in the taco seasoning mix, black beans, diced tomatoes with green chilies, and water.
  5. Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally, allowing the liquid to reduce slightly.
  6. Sprinkle the shredded cheese over the top. Cover the skillet and cook until the cheese is melted, about 2 minutes.
  7. Serve hot.

Notes

  • You can substitute ground chicken or lean ground beef for the turkey.
