Description

A simple baked dish featuring ground turkey and sweet potatoes.


Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
  3. Add chopped onion and minced garlic to the skillet with the turkey. Cook until the onion softens, about 5 minutes.
  4. Stir in diced sweet potatoes, chicken broth, thyme, salt, and pepper. Bring the mixture to a simmer.
  5. Transfer the turkey and sweet potato mixture to the prepared baking dish.
  6. Bake for 30 to 35 minutes, or until the sweet potatoes are tender and the liquid is mostly absorbed.

Notes

  • You can substitute ground chicken for ground turkey if desired.
  • For a richer flavor, add 1/2 cup of shredded cheddar cheese during the last 5 minutes of baking.
