A simple baked dish featuring ground turkey and sweet potatoes.
Ingredients

- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a baking dish.
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Add chopped onion and minced garlic to the skillet with the turkey. Cook until the onion softens, about 5 minutes.
- Stir in diced sweet potatoes, chicken broth, thyme, salt, and pepper. Bring the mixture to a simmer.
- Transfer the turkey and sweet potato mixture to the prepared baking dish.
- Bake for 30 to 35 minutes, or until the sweet potatoes are tender and the liquid is mostly absorbed.
Notes
- You can substitute ground chicken for ground turkey if desired.
- For a richer flavor, add 1/2 cup of shredded cheddar cheese during the last 5 minutes of baking.
