Description

A quick and simple skillet meal featuring ground turkey and fresh zucchini.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey to the skillet and cook until browned, breaking it up with a spoon. Drain any excess fat.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Add chopped zucchini, diced tomatoes (with juice), oregano, and basil.
  6. Season with salt and pepper.
  7. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 to 15 minutes, or until zucchini is tender.
  8. Stir well before serving.

  • You can substitute ground chicken for ground turkey.
