Description
A quick and simple skillet meal featuring ground turkey and fresh zucchini.
Ingredients

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium zucchini, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey to the skillet and cook until browned, breaking it up with a spoon. Drain any excess fat.
- Add chopped onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Add chopped zucchini, diced tomatoes (with juice), oregano, and basil.
- Season with salt and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 to 15 minutes, or until zucchini is tender.
- Stir well before serving.
Notes
- Serve this dish over rice or quinoa for a more substantial meal.
- You can substitute ground chicken for ground turkey.
