Easy Ricotta Pasta

Description

A simple and quick pasta dish using creamy ricotta cheese.


Ingredients

  • 1 pound pasta (spaghetti or penne recommended)
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup reserved pasta water
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant. Do not brown the garlic.
  3. In a bowl, mix the ricotta cheese and Parmesan cheese together.
  4. Drain the pasta and add it directly to the skillet with the garlic and oil. Remove the skillet from the heat.
  5. Add the ricotta-Parmesan mixture to the pasta. Stir well to coat.
  6. Gradually add the reserved pasta water, a few tablespoons at a time, stirring constantly until a creamy sauce forms that coats the pasta. You may not need all the water.
  7. Season with salt and pepper to your taste.
  8. Serve immediately, garnished with fresh herbs if desired.

Notes

  • Use whole milk ricotta for the creamiest texture.
  • For a richer flavor, add a squeeze of fresh lemon juice at the end.
