Ingredients

  • 1 cup boiling water
  • 1 cup cold water
  • 1 (15 ounce) can mandarin oranges, drained
  • 1 cup small curd cottage cheese
  • 1/2 cup chopped celery
  • 1/4 cup chopped pecans (optional)

Instructions

  1. Dissolve gelatin in boiling water in a medium bowl.
  2. Stir in cold water and mix until fully dissolved.
  3. Chill mixture in the refrigerator until it begins to thicken, about 45 minutes.
  4. Gently fold in the drained mandarin oranges, cottage cheese, chopped celery, and pecans, if using.
  5. Pour the mixture into a 4-cup mold or serving dish.
  6. Chill for at least 4 hours, or until firm.
  7. To serve, dip the mold briefly in warm water and invert onto a serving plate.
