A simple, sweet, and refreshing gelatin salad featuring mandarin oranges.
Ingredients

- 1 (3 ounce) package orange gelatin
- 1 cup boiling water
- 1 cup cold water
- 1 (15 ounce) can mandarin oranges, drained
- 1 cup small curd cottage cheese
- 1/2 cup chopped celery
- 1/4 cup chopped pecans (optional)
Instructions
- Dissolve gelatin in boiling water in a medium bowl.
- Stir in cold water and mix until fully dissolved.
- Chill mixture in the refrigerator until it begins to thicken, about 45 minutes.
- Gently fold in the drained mandarin oranges, cottage cheese, chopped celery, and pecans, if using.
- Pour the mixture into a 4-cup mold or serving dish.
- Chill for at least 4 hours, or until firm.
- To serve, dip the mold briefly in warm water and invert onto a serving plate.
Notes
- Drain the mandarin oranges well to prevent the salad from becoming too watery.
- For a creamier texture, you can substitute the cold water with cold milk or use a whipped topping instead of cottage cheese.
