Ingredients

  • 1 cup pecan halves
  • 1 cup caramel bits or soft caramels
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional)

Instructions

  1. Line a baking sheet with parchment paper.
  2. Toast pecans in a dry skillet over medium heat for 5 minutes until fragrant. Let cool slightly.
  3. Melt caramel bits in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  4. Stir the toasted pecans into the melted caramel until fully coated.
  5. Drop spoonfuls of the caramel-pecan mixture onto the prepared baking sheet.
  6. Melt chocolate chips with coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Drizzle or spoon melted chocolate over the caramel clusters.
  8. Refrigerate for at least 30 minutes, or until the chocolate is set.

Notes

  • For a cleaner drizzle, place melted chocolate in a small piping bag or a zip-top bag with a corner snipped off.
