Creamy Salmon Alfredo Pasta

Description

A simple recipe for rich pasta with salmon in an Alfredo sauce.


Ingredients

  • 1 pound fettuccine pasta
  • 1 pound salmon fillets, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook the fettuccine according to package directions until al dente. Reserve 1/2 cup of the pasta water before draining.
  2. While the pasta cooks, season the salmon pieces lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium heat. Add the salmon and cook for 3-4 minutes per side until cooked through. Remove the salmon from the skillet and set aside.
  4. Reduce the heat to low. Add the butter to the same skillet and let it melt. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic brown.
  5. Pour in the heavy cream and bring the mixture to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Remove the skillet from the heat. Gradually stir in the Parmesan cheese until the sauce is smooth. Stir in the salt and pepper.
  7. Add the drained pasta and the cooked salmon to the sauce. Toss gently to coat everything evenly. If the sauce seems too thick, add the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  8. Serve immediately, garnished with fresh parsley.

Notes

  • You can use pre-cooked or smoked salmon for a faster preparation time.
  • For a lighter sauce, substitute half-and-half for some of the heavy cream, but the sauce will be less rich.
