A basic recipe for cooking fluffy white rice with coconut milk.

- 1 cup white rice
- 1 cup water
- 1 cup full-fat coconut milk
- 1/2 teaspoon salt
Instructions
- Rinse the white rice under cold water until the water runs clear.
- Combine the rinsed rice, water, coconut milk, and salt in a medium saucepan.
- Bring the mixture to a boil over medium-high heat, stirring once.
- Once boiling, reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 15 to 20 minutes without lifting the lid.
- Remove the saucepan from the heat and let it stand, covered, for 10 minutes.
- Fluff the rice gently with a fork before serving.
Notes
- Use full-fat coconut milk for the best flavor and texture.
- Do not lift the lid while the rice is simmering.
