Description
A straightforward recipe for tender chicken served over simple buttered noodles.
Ingredients
Scale
- 1 lb boneless, skinless chicken breasts
- 8 oz egg noodles
- 4 tbsp unsalted butter
- 1/4 cup chicken broth
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional garnish)
Instructions
- Cut the chicken breasts into bite-sized pieces.
- Season the chicken pieces with salt and pepper.
- Cook the egg noodles according to package directions until tender. Drain the noodles well.
- While the noodles cook, melt 2 tablespoons of butter in a large skillet over medium-high heat.
- Add the seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium. Add the remaining 2 tablespoons of butter and the chicken broth to the skillet. Stir until the butter melts and the mixture is combined.
- Add the drained noodles to the skillet. Toss gently to coat the noodles with the butter sauce.
- Return the cooked chicken to the skillet and toss everything together briefly to heat through.
- Serve immediately, garnishing with fresh parsley if desired.
Notes
- You can substitute chicken broth with a splash of heavy cream for a richer sauce.
- Use pre-cut chicken strips to save preparation time.
