Ingredients

  • 1 tablespoon olive oil
  • 1 pound pre-cooked chicken sausage, sliced
  • 2 large bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken sausage to the skillet and cook until lightly browned, about 5 minutes. Remove sausage and set aside.
  3. Add the sliced bell peppers and onion to the same skillet. Cook, stirring occasionally, until softened, about 7 minutes.
  4. Stir in the minced garlic and oregano. Cook for 1 minute until fragrant.
  5. Return the cooked sausage to the skillet. Season with salt and pepper.
  6. Cook everything together for 2 more minutes, stirring to combine flavors.
  7. Serve immediately.
