Description

A quick and easy salad featuring cooked chicken mixed with fluffy couscous and fresh vegetables.


Ingredients

  • 1 cup dry couscous
  • 1 cup boiling water or chicken broth
  • 1 tablespoon olive oil
  • 1 cup cooked, shredded chicken breast
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomato
  • 1/4 cup chopped red onion
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Place the dry couscous in a bowl. Pour the boiling water or broth over the couscous. Cover the bowl and let it stand for 5 minutes.
  2. Fluff the couscous with a fork. Add the olive oil and mix well.
  3. Add the shredded chicken, cucumber, tomato, and red onion to the couscous.
  4. In a small bowl, whisk together the lemon juice, parsley, salt, and pepper.
  5. Pour the dressing over the couscous mixture. Toss gently to combine all ingredients.
  6. Serve immediately or chill before serving.

Notes

  • You can substitute chicken broth for water to add more flavor to the couscous.
