Description
A simple baked casserole using shredded chicken and cauliflower rice.
Ingredients

- 2 cups cooked, shredded chicken
- 2 cups cauliflower rice
- 1 cup cream of chicken soup
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onion (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the shredded chicken, cauliflower rice, cream of chicken soup, milk, salt, and pepper. Mix well.
- Stir in half of the shredded cheddar cheese into the mixture.
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle the remaining half of the cheddar cheese over the top.
- Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned.
- Remove from the oven and let it sit for 5 minutes before serving.
- Garnish with chopped green onion.
Notes
- You can use frozen cauliflower rice; thaw and drain excess moisture before mixing.
- For a richer flavor, substitute heavy cream for the milk.
- Use rotisserie chicken for quick preparation.
