Description

A simple baked dish featuring white beans, tomatoes, and cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1/2 cup vegetable broth
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes, white beans, vegetable broth, oregano, salt, and pepper. Bring the mixture to a simmer.
  5. Pour the bean mixture into the prepared baking dish.
  6. Sprinkle the mozzarella cheese evenly over the top.
  7. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the edges are lightly browned.
  8. Let stand for 5 minutes before serving.

Notes

  • You can substitute cannellini beans with great northern beans.
  • For extra flavor, add a pinch of red pepper flakes with the oregano.
