Description
A recipe for moist carrot cake topped with sweet maple-flavored cream cheese frosting.

- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 1/2 cups granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 2 cups grated carrots
- 1 teaspoon vanilla extract
- For Frosting: 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, whisk the vegetable oil, granulated sugar, and brown sugar until combined. Beat in the eggs one at a time. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated carrots.
- Pour the batter evenly into the prepared cake pans.
- Bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- For the frosting, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing until combined. Beat in the maple syrup and vanilla extract until the frosting is light and fluffy.
- Once the cakes are completely cool, frost the layers and the top of the cake.
Notes
- You can add 1/2 cup of chopped walnuts or pecans to the batter for extra texture.
- Make sure your carrots are finely grated for the best cake texture.
- Chill the cake for 30 minutes before slicing for cleaner cuts.
