Description

A simple recipe for flavorful Cajun seasoned chicken served over rice.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup long-grain white rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Toss the chicken pieces with Cajun seasoning in a bowl.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  4. Add onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
  5. Add garlic and cook for 1 minute until fragrant.
  6. Stir in diced tomatoes (with juice), chicken broth, salt, and pepper. Bring the mixture to a simmer.
  7. Stir in the uncooked rice. Cover the skillet, reduce heat to low, and cook for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
  8. Return the cooked chicken to the skillet. Stir to combine and heat through for 2 minutes.
  9. Serve immediately.

Notes

  • You can substitute brown rice, but adjust the cooking time as needed.
  • Adjust the amount of Cajun seasoning based on your preference for spice.
