A simple recipe for flavorful Cajun seasoned chicken served over rice.

- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup long-grain white rice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Toss the chicken pieces with Cajun seasoning in a bowl.
- Heat olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add onion and bell pepper to the same skillet. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in diced tomatoes (with juice), chicken broth, salt, and pepper. Bring the mixture to a simmer.
- Stir in the uncooked rice. Cover the skillet, reduce heat to low, and cook for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
- Return the cooked chicken to the skillet. Stir to combine and heat through for 2 minutes.
- Serve immediately.
Notes
- You can substitute brown rice, but adjust the cooking time as needed.
- Adjust the amount of Cajun seasoning based on your preference for spice.
