Beef Skillet Enchiladas

Description

A simple recipe for making beef enchiladas in a single skillet.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (10 ounce) can red enchilada sauce
  • 1 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn tortillas
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Brown the ground beef and onion in a large skillet over medium heat. Drain excess fat.
  2. Stir in the enchilada sauce, water, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer.
  3. Cut the corn tortillas into quarters.
  4. Add the tortilla pieces to the simmering beef mixture. Stir gently to coat the tortillas.
  5. Cover the skillet and cook for 5 minutes, or until the tortillas have softened.
  6. Sprinkle the shredded cheese over the top of the mixture.
  7. Cover the skillet again and cook for 2 to 3 minutes, until the cheese melts.
  8. Serve hot directly from the skillet.

Notes

  • You can substitute ground turkey for ground beef.
  • Add a dash of hot sauce for extra heat.
