Description
A quick pasta dish featuring bacon and peas in a light sauce.
Ingredients

- 8 ounces pasta (spaghetti or penne)
- 4 slices bacon, chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1/2 cup pasta water
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions. Reserve 1/2 cup of the cooking water before draining.
- While pasta cooks, cook bacon in a large skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon fat in the skillet.
- Add olive oil to the skillet if needed. Add onion and cook until soft, about 3 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add frozen peas and reserved pasta water to the skillet. Bring to a simmer and cook until peas are heated through, about 3 minutes.
- Add drained pasta to the skillet. Toss to coat.
- Stir in Parmesan cheese and most of the cooked bacon. Season with salt and pepper.
- Serve immediately, topping with remaining bacon.
Notes
- Use any short or long pasta shape you prefer.
- For a richer sauce, add 1/4 cup heavy cream with the pasta water.
