Creamy Butternut Squash Pasta

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 ounces pasta (like penne or rigatoni)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper. Roast for 20 to 25 minutes until tender.
  2. While the squash roasts, cook the pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
  3. In a saucepan, heat the remaining 1 tablespoon of olive oil over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook for 1 minute more.
  4. Transfer the roasted squash, cooked onion, garlic, vegetable broth, and heavy cream to a blender or food processor. Blend until completely smooth.
  5. Pour the squash sauce back into the saucepan. Heat gently over low heat. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency. Season with additional salt and pepper if needed.
  6. Add the drained pasta to the sauce and toss to coat thoroughly. Stir in the Parmesan cheese, if using. Serve immediately.

  • Roast the squash ahead of time to speed up the cooking process.
  • For a richer flavor, substitute half of the vegetable broth with dry white wine.
  • Garnish with toasted pecans or fresh sage leaves before serving.
